FAQs

How do you make muffins have a crispy top? ›

The secret to produce a crispy, crackly muffin top was to sprinkle a generous amount of sugar over each muffin. The sugar melts the muffin top, causing it to spread more, and gives it a crunchy texture. I decided to try this same technique on this banana muffin recipe, too.

What is the secret to high muffins? ›

The idea here is to start the muffins in a very hot oven for just a short amount of time. This activates the baking powder and allows the muffins to shoot up in height quickly. We then turn the heat down and continue to cook for longer. This is done to avoid over-browning and overbaking.

Why do you fill empty muffin tins with water? ›

If you've used all your batter but still have empty cups remaining in the tin, fill each empty cup with a few tablespoons of water. This will promote even baking, and can help keep the tin from warping as the muffins bake.

How do you keep muffins crispy and not soggy? ›

Letting them cool off is important, as hot muffins in an airtight container can produce condensation that causes the muffins to become soggy. Line the bottom of the container or plastic bag with a paper towel before placing the muffins inside in a single layer.

What ingredient goes on top of the muffins before baking? ›

Choose from a variety of options, such as streusel crumbs or sugar crystals, which go on the muffins before baking, or a glaze, which you can drizzle on after the muffins are baked and cooled.

What does adding an extra egg do to muffins? ›

If there isn't enough egg, your batter or dough may not be able to hold its structure or could end up overly dry or dense. On the other hand, if there is too much egg, your baked goods could lose their shape due to excess liquid, or have a rubbery (or even overly cakey) texture depending on the recipe.

What does adding more eggs do to muffins? ›

Eggs are responsible for giving baked goods structure, which means the amount you use directly affects the resulting texture. Using too few eggs will make your desserts dense, but using too many will make them rubbery.

What is the best temperature to bake muffins? ›

Ideal Muffin Cooking Temperature

That being said, the standard oven temperature for baking desserts like quick breads and muffins is commonly set to 350 degrees Fahrenheit. Setting your oven to this temperature will almost always produce a well-cooked muffin recipe.

Why do you put water in the oven when baking muffins? ›

It's an old wives tale, and it actually increases the humidity in the oven which creates water vapor that will weigh down the muffin batter. It also increases the barometric pressure within the oven, which will reduce the amount the muffins will rise.

Is it better to use milk or water in muffin mix? ›

In a muffin mix that calls for water, can I substitute milk? A. We don't recommend using milk instead of water because the milk can make holes in the paper liners or the sides of the muffins.

What happens if you put water in muffin mix instead of milk? ›

Though you may notice a slight difference in texture, you can definitely substitute water for milk when preparing our muffin mixes!

What is the difference between a Texas muffin and a regular muffin? ›

Standard muffin cup is about 2 1/2 inches in diameter and holds 1/4 to 1/3 cup batter. Giant or Texas-size muffin cup is about 3 ½ inches in diameter and holds 5/8 cup batter.

How do you make muffins rise higher? ›

Why do my muffin tops get soggy? ›

Sugars are hygroscopic, meaning they attract water. Within baked goods, sugars help maintain a moist and tender crumb. Sugar on the exposed tops, however, will grab water from humid air, creating a wet or sticky top.

What is the crunchy sugar on top of muffins called? ›

Demerara sugar is a type of minimally processed cane sugar with large, crunchy granules. It's golden-brown hue comes from small amount of natural molasses it contains. It's often used as a garnish on baked goods like muffins or as a sweetener for tea or coffee.
