How to cook Beef Kare kare
Having family reunions can sometimes be quite stressful. As fun as it is to see our relatives, having family reunions means that I have to think of what food I can share with everyone. A dish I realized that everyone will love that I can also easily make is Beef Kare Kare.
This dish has quite an interesting history. There are many debates as to what its origins are but the one I came across on is that this was made by Indian soldiers who settled in the Philippines. They had a similar dish back home but could not find the exact ingredients to make it, so instead they chose to use similar ingredients to make it.
This dish has a lot of ingredients and each ingredient it has brings a benefit that your body would appreciate. I’m going to list down a few of them. Its sauce is made from roasted peanuts. Roasted peanuts contain high levels of Magnesium which can regulate blood pressure. Bok Choy has anti-cancer and anti-anemia components. Beef chunks is a good source for protein for muscle building.
Consuming Eggplant is good for those who are prone or who have diabetes. Vitamin K is found in green beans which is for strengthening our bones. Vitamin K can also prevent digestive problems like constipation and hemorrhoids.
When I learned about all the benefits of Beef Kare Kare Recipe I got excited, even more so when I remembered how easy its recipe easy. Basically, all you need to do is put the ingredients in a pot one by one and just wait.

Beef Kare kare Recipe is made from peanut sauce with a variety of vegetables, stewed oxtail, beef, and occasionally offal or tripe. Meat variants may include goat meat, chicken or rarely fish. It is often eaten with bagoong (shrimp paste), sometimes spiced with chili, and sprinkled with calamansi juice.
Traditionally, any Filipino fiesta particularly in the province of Pampanga is not complete without the kare-kare dish.

Ingredients
- 1/2 kilo beef shank
- 1 bundle of pechay or bok choy
- 1 bundle of string beans cut into 2 inch slices
- 2 pcs eggplants sliced
- 1/2 cup peanut butter
- 1/2 cup shrimp paste bagoong
- 1 Liter of water
- 1/2 cup annatto seeds soaked in a cup of water
- 1 tbsp garlic minced
- 1 large onion chopped
- salt and pepper to taste
Instructions
In a large pot, add water and beef shank then boil for 3 hours or until tender (35 minutes if using a pressure cooker)
Once the meat is tender, add the peanut butter, and coloring (water from the annatto seed mixture) and simmer for 5 to 7 minutes
On a separate pan, saute the garlic then add the eggplant, and string beans and cook for 3 minutes
Transfer the cooked vegetables to the large pot (where the rest of the ingredients are)
Add the Pechay or bok choy simmer for 2 minutes
Add salt and pepper to taste
Serve hot with shrimp paste.
